Pelmeni dough can be made several different ways:

Recipe 1 (for approximately 80 pieces):

  • 1 cup water
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 2 cup + 1/4 cup flour (to add on a board)

 

Recipe 2 (for approximately 80 pieces):

  • 1 cup water
  • 1/2 tsp salt
  • 2 tbsp oil
  • 2 1/4 cup + 1/4 cup flour (to add on a board)

 

Recipe 3 (this is good for varenyki):

  • 1 egg
  • 1/4 cup oil
  • 1 cup water
  • 1/2 tsp salt
  • 2 1/2 + 1/2 cup flour  (to add on a board)

 

Ingredients for meat filling:

  • 1 lb 2 oz  ground meat (pork, chicken or mix of both)
  • 1 clove garlic, pressed
  • 1/2 medium onion, pureed
  • 1 egg
  • 1/2 tsp black pepper
  • 1 tsp salt
  • 1 tsp seasoned salt

 

Meat filling reparation:

Mix well all ingredients, adjust seasoning to your personal preferences. I use a Kitchen Aid mixer with a flat beater blade to mix the filling, but it can be mixed just by hands as well.

 

Dough preparation:

  1. Mix all ingredients in a mixing bowl.
  2. Add specified amount of flour on a board (or clear and clean surface). Transport dough over the flour. Knead well by hands. Use extra flour if necessary but don’t overuse so the dough will be soft.
  3. Roll the dough with a rolling pin.

Making pelmeni:

  1. You can make pelmeni in two ways:
  2. Cut 1 1/2″ circles with a small measuring glass (shot glass).  Put about 1/2 tsp meat filling into each dough circle, fold and pinch well, making a half-circle. Then pinch together two corners, making pelmeni nice lookingpelmeni - how to make by hands 5 in
  3. Using a pelmennitsa mold, roll some amount of dough, dusting with flour on the bottom so it’s not sticky and little flour on the top just keep the rolling pin free of sticking. Put the rolled dough on the dusted with flour mold. Using a teaspoon, put about 1/2 tsp meat filling into each cell.  Separately roll another piece of dough, put on the top of filled with meat first layer. Using a rolling pin, carefully and slowly, push it over the mold, forming/cutting pelmeni to separate pieces. Cooking:

  1. In a large pan, drop pelmeni in lightly salted boiling water, stir, continue to cook on high heat until pelmeni are floating. Turn heat down, cook for 7 to 8 minutes. Using a mesh strainer or a skimmer, transfer pelmeni to deep serving bowl.
  2. Add butter so pelmeni won’t stick to each other. Sprinkle with ground pepper, if desired.
  3. Serve with sour cream or white vinegar.
