Plov with Raisins

Ingredients:

  • 1 lb (450 g) meat (pork, lamb, or beef)
  • 9 oz (250 ml) oil
  • 1 lb (450 g) carrot
  • 1 lb (450 g) onion
  • 1 lb (450 g) rice
  • 1 oz (30 g) garlic cloves, unpeeled
  • 4 cup hot water
  • 1/4 cup raisins
  • 1-2 tsp dry barberries, optional
  • 1/2 tsp turmeric powder
  • 2 tsp Goya Adobo seasoning, any kind
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp seasoned salt

Directions:

  1. Cut the meat into cubes.
  2. Cut the carrot into sticks or circles.
  3. Cut the onion into quarter circles.
  4. Rinse the rice.
  5. Add the oil and meat into a Dutch oven (iron cast). On high heat, cook the meat for about 10 minutes, covered with a lid. Reduce heat to medium, cook for another 5 minutes.
  6. Add the onion, increase heat to high, continue cooking.
  7. After 5-7 minutes, add the carrot, cook for another 3-4 minutes, on high heat.
  8. Add the rice and hot water.
  9. Add the rest of the ingredients, cover with a lid, continue cooking on medium heat for another 20 minutes.
  10. Stir lightly, reduce heat to low, cook for another 10 minutes or until ready.
  11. Serve hot with your favorite salad or vegetables. Enjoy!
