This is my mom’s recipe, my childhood memory. Pancakes with apples inside. So yummy!
- 1 egg
- 1 cup buttermilk
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 tbsp sugar
- 1 1/2 cup flour
- Apples, peeled and sliced
- Mix the egg, buttermilk, salt, sugar, and baking soda. Let it stay for a minute, until the bubbles appear on the top.
- Add the flour; mix well.
- Put the prepared and sliced apple circles into the batter. Using a tablespoon, get each apple circle coated in the batter and put in the preheated pan with oil. Bake on low to medium heat on both sides until golden brown, on both sides. The total baking time is about 10 minutes.
- Serve with sour cream if desired. Enjoy!
