Making your own mayonnaise is a good idea. You’ll never worry about its quality because you know what ingredients are in it.
• Egg yolks – 2
• Lemon juice – 3 tsp
• Sea salt – ¼ tsp
• Mustard – ½ tsp, sweet hot, Hickory Farms brand
• White vinegar – ½ tsp
• Olive oil, light – ¾ cup
Preparation:
Put all ingredients except the oil into a bowl.
Start mixing with a whisk, slowly adding the oil.
Do not add the oil in the beginning, it may not emulsify well.
Put into a container with a lid, store in a refrigerator.
