Meatballs / Patties (with or without mushrooms)

  • 1 lb 6 oz (600g) ground pork or ground chicken thighs
  • 1 medium potato, peeled, uncooked
  • 1 oz (30 g) white bread
  • 1/2 medium onion
  • 1 clove of garlic (optional)
  • 1/2 tsp ground pepper
  • 1 3/4 tsp salt
  • 1 egg
  • Flour for the rolling

Mushroom Filling (optional):

  • 5-7 mushrooms
  • 1/4 onion, medium
  • 2-3 tbsp oil
  • Salt and pepper to taste

Preparation (without filling):

  1. Blend potato chunks, bread, onion, garlic, and egg in a blender or food processor.
  2. In a larger mixing bowl or Kitchen Aid mixer bowl (if available), combine all ingredients and ix well.
  3. Preheat the frying pan, adding oil, on medium heat.
  4. Form the 2-inch meatballs, forming round or oval shape.
  5. Roll each meatball in flour, put into a pan.
  6. Changing heat from medium to low, cook meatballs on both sides for about 12-15 minutes. Make sure they are completely cooked inside.
  7. Serve hot (some people like them cold as well) with mashed potato, or pasta, or rice, or just a piece of bread.

Preparation (with mushroom filling):

  • Chop mushrooms and onion.
  • Cook onion on a pan, with oil, for 3-4 minutes; add chopped mushrooms, continue cooking for 7-10 more minutes, stirring occasionally.
  • Transfer  mushroom mixture to a bowl, add salt and pepper to taste.
  • After step 4 (above), put a teaspoon of mushrooms filling into each meatball, closing it up, and forming a round or oval shape.
  • Continue with step 5.

Note: Since I have bought a Kitchen Aid mixer, I always use it to mix all ingredients. It is much easier and a real time saver. I love it!

To mix all ingredients, I use a flat beater attachment that came with a mixer (similar to this one). I have a 6-qt mixer, but smaller model would work as well.
