Ingredients:
- 1 lb (450 g) meat (pork, lamb, or beef)
- 9 oz (250 ml) oil
- 1 lb (450 g) carrot
- 1 lb (450 g) onion
- 1 lb (450 g) rice
- 1 oz (30 g) garlic cloves, unpeeled
- 4 cup hot water
- 1/4 cup raisins
- 1-2 tsp dry barberries, optional
- 1/2 tsp turmeric powder
- 2 tsp Goya Adobo seasoning, any kind
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp seasoned salt
Directions:
- Cut the meat into cubes.
- Cut the carrot into sticks or circles.
- Cut the onion into quarter circles.
- Rinse the rice.
- Add the oil and meat into a Dutch oven (iron cast). On high heat, cook the meat for about 10 minutes, covered with a lid. Reduce heat to medium, cook for another 5 minutes.
- Add the onion, increase heat to high, continue cooking.
- After 5-7 minutes, add the carrot, cook for another 3-4 minutes, on high heat.
- Add the rice and hot water.
- Add the rest of the ingredients, cover with a lid, continue cooking on medium heat for another 20 minutes.
- Stir lightly, reduce heat to low, cook for another 10 minutes or until ready.
- Serve hot with your favorite salad or vegetables. Enjoy!
