Potato Pancakes

Draniki -potato fritters,traditional dish of Belarusian cuisine.


  • 4 potato, medium to large
  • 1/2 onion
  • 1 egg
  • 1/4 tsp ground pepper
  • 1+ tsp salt
  • 10-12 tbsp flour (2 1/2 – 3 tbsp per one potato)
  • Oil for cooking


  1. Peel and cut the potato and onion into small pieces. Make a puree using a blender like Ninja or similar.
  2. Add the egg, pepper, salt, and flour; mix well.
  3. Preheat the frying pan with oil and keep it on medium to high heat. Using a tablespoon, put the pancake mix onto the pan, making 2-inch (5 cm) round pancakes.
  4. Cook on both sides until golden brown.
  5. Serve hot with sour cream and/or butter.



These pancakes can be cooked well on both non-stick pan and/or stainless steel frying pan without sticking.

The best texture will come from grating whole pilled raw potato on a traditional grater (shown below on a picture) on side 2 (it has larger holes comparing to side 1). This is not safest way to grate potato without scratching your fingers, but if using very carefully, you’ll get the best potato pancakes.  But to stay on quick and safe side, just use any kitchen processor or blender to purify potato.
