Zucchini Pancakes


  • 2 zucchini (1 1/4 cup of puree, or 10 oz)
  • 1 egg
  • 1/2 onion, medium
  • 1/4 tsp ground pepper
  • 1 1/4 tsp salt
  • 1 cup flour
  • Coconut or avocado or olive oil, for frying


  1. Slice and blend the zucchini and onion, to make a puree.
  2. Add the egg, salt, pepper, and flour, mix well.
  3. Preheat the pan with oil.
  4. Using a spoon, add the batter to the pan, forming pancakes.
  5. Fry pancakes on medium to high heat, on both sides, until golden brown.
  6. Serve hot with sour cream.
