- 2 zucchini (1 1/4 cup of puree, or 10 oz)
- 1 egg
- 1/2 onion, medium
- 1/4 tsp ground pepper
- 1 1/4 tsp salt
- 1 cup flour
- Coconut or avocado or olive oil, for frying
- Slice and blend the zucchini and onion, to make a puree.
- Add the egg, salt, pepper, and flour, mix well.
- Preheat the pan with oil.
- Using a spoon, add the batter to the pan, forming pancakes.
- Fry pancakes on medium to high heat, on both sides, until golden brown.
- Serve hot with sour cream.
